If you love pancakes but still trying to figure out the best way to make them vegan, then you’re not alone. I’ve been vegan for over 13 years and still experimenting with recipes for the perfect vegan pancakes. But don’t let that put you off! These days I like to add vegan protein powder, so that they satisfy my protein needs but that can make things a bit more complicated. Luckily I recently tried a recipe that actually worked – hurrah! – so here it is.
Ingredients (this is my adapted version)
- 40g Purition sachet (any flavour)
- 1 egg replacement – I used Follow Your Heart VeganEgg Replacer but you can also use one flax egg (mix one tablespoon of ground flaxseed with three tablespoons of water and leave to expand for 10 mins)
- 30g oat flour
- Mix the Purition and oat flour in a bowl.
- Make up the egg replacement as per the instructions
- Add the egg replacement to the dry ingredients and mix together – if too dry, add a splash of non-dairy/your choice of milk to loosen the mix.
- Melt a little oil to a pan over a medium heat until pan is hot.
- Add blobs of mixture to form pancakes. Swirl the mixture around to form your ideal shape.
- Allow pancake to cook on a medium heat, flip and cook the other side.
I actually made this recipe twice; once with Vanilla and then with Almond & Orange and found the second attempt (pic left) was better as I used a bit more liquid to thin the mixture down. The first time (pic right) was a bit too thick, which made it difficult to spread around on the pan so the slightly smoother version meant bigger pancakes (bottom pic left) – far more satisfying!
What I like about Purition protein
The Purition protein powder added around 14-15g protein to the mix, which is good seeing as 30g of oat flour is only around 3g of protein. It also added texture from the seeds as all Purition protein powders are made with ground whole foods.

There are loads of other great flavours in the vegan range here – more than any other brand I know!
If you’re looking for a protein powder that’s not sweet and uses only real-food ingredients then Purition is your pal. The fat content is slightly higher than other protein powders I use (because of the nuts and seeds) and the protein slightly lower (around 15g vs my usual 22-30g) so I wouldn’t use this after training as the fat would slow down the absorption of protein and carbs.
Instead, I’d definitely be making more pancakes with it or save it for my end of evening / pre-bed protein – also tasty as a hot drink 😋 – because according to the sports nutritionists I’ve worked with, that’s the ideal time to take in extra fat and help keep blood sugar levels down overnight.
